- 3–4 lb arm roast
- 2 tbsp olive oil
- 1 tsp salt
- 1 tsp black pepper
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp paprika
- 1 cup beef broth
- 2 carrots, chopped
- 2 potatoes, chopped
- 1 onion, sliced
Instructions
- Preheat oven to 325°F.
- Rub the roast with olive oil and season with salt, pepper, garlic powder, onion powder, and paprika.
- Heat a skillet over medium-high heat and sear the roast on all sides.
- Place the roast in a roasting pan and add beef broth, carrots, potatoes, and onion.
- Cover with foil and roast for 3-4 hours until tender.
- Let rest for 10 minutes before slicing.

- Use a meat thermometer to ensure internal temperature reaches 145°F.
- Adjust seasoning to taste.
