- 1/4 cup Dijon Mustard
- 3 pounds Mashed Potatoes (peeled and cubed)

- 4 cups Spring Vegetables (such as asparagus, peas, and carrots)

Instructions
- Preheat your oven to 325°F (165°C).
- In a small bowl, combine brown sugar, honey, and Dijon mustard to create the glaze.
- Score the surface of the ham in a diamond pattern and place it in a roasting pan. Brush with the glaze.
- Cover the ham with foil and bake for 2-2.5 hours, basting with the glaze every 30 minutes.
- Meanwhile, prepare the mashed potatoes by boiling them in salted water until tender. Drain and mash with butter, milk, salt, and pepper.
- For the spring vegetables, toss them with olive oil, salt, and pepper, then roast in the oven for about 15-20 minutes until tender.
- Once the ham is done, let it rest for 15 minutes before slicing.
- Serve the glazed ham alongside the creamy mashed potatoes and roasted spring vegetables.
