  • 1 cup Brown Sugar
  • 1/2 cup Honey
  • 1/4 cup Dijon Mustard
  • 3 pounds Mashed Potatoes (peeled and cubed)
  • 1/2 cup Butter
  • 1/2 cup Milk
  • to taste Salt
  • to taste Pepper
  • 4 cups Spring Vegetables (such as asparagus, peas, and carrots)
  • 2 tablespoons Olive Oil
  • 1 whole Carrot Cake (for dessert)

Instructions

  1. Preheat your oven to 325°F (165°C).
  2. In a small bowl, combine brown sugar, honey, and Dijon mustard to create the glaze.
  3. Score the surface of the ham in a diamond pattern and place it in a roasting pan. Brush with the glaze.
  4. Cover the ham with foil and bake for 2-2.5 hours, basting with the glaze every 30 minutes.
  5. Meanwhile, prepare the mashed potatoes by boiling them in salted water until tender. Drain and mash with butter, milk, salt, and pepper.
  6. For the spring vegetables, toss them with olive oil, salt, and pepper, then roast in the oven for about 15-20 minutes until tender.
  7. Once the ham is done, let it rest for 15 minutes before slicing.
  8. Serve the glazed ham alongside the creamy mashed potatoes and roasted spring vegetables.
