- 500g chicken, cut into pieces
- 1 cup coconut milk
- 1 large onion, finely chopped
- 2 tomatoes, diced
- 2 cloves garlic, minced
- 1 tbsp ginger, grated
- 1 tbsp curry powder
- 1 tsp turmeric
- 1 tsp cumin
- 1 tsp coriander
- 1 chili pepper, sliced (optional)
- 2 tbsp vegetable oil
- Salt to taste
- Fresh cilantro for garnish
Instructions
- Heat oil in a large pot over medium heat.
- Add onions and sauté until golden.
- Stir in garlic, ginger, and chili pepper, cooking for 1 minute.
- Add chicken pieces and brown lightly on all sides.
- Mix in curry powder, turmeric, cumin, and coriander.
- Add tomatoes and cook until softened.
- Pour in coconut milk, stir well, and bring to a simmer.
- Cover and cook for 25-30 minutes until chicken is tender.
- Adjust salt to taste.
- Garnish with fresh cilantro before serving.
Notes
- For extra heat, add more chili.
- Use full-fat coconut milk for a creamier texture.
- Serve with rice or flatbread.
