  • 1 cup coconut milk
  • 1 large onion, finely chopped
  • 2 tomatoes, diced
  • 2 cloves garlic, minced
  • 1 tbsp ginger, grated
  • 1 tbsp curry powder
  • 1 tsp turmeric
  • 1 tsp cumin
  • 1 tsp coriander
  • 1 chili pepper, sliced (optional)
  • 2 tbsp vegetable oil
  • Salt to taste
  • Fresh cilantro for garnish

Instructions

  1. Heat oil in a large pot over medium heat.
  2. Add onions and sauté until golden.
  3. Stir in garlic, ginger, and chili pepper, cooking for 1 minute.
  4. Add chicken pieces and brown lightly on all sides.
  5. Mix in curry powder, turmeric, cumin, and coriander.
  6. Add tomatoes and cook until softened.
  7. Pour in coconut milk, stir well, and bring to a simmer.
  8. Cover and cook for 25-30 minutes until chicken is tender.
  9. Adjust salt to taste.
  10. Garnish with fresh cilantro before serving.
