Ingredients

  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 3 cloves garlic, minced
  • 6 cups chicken broth
  • 2 cups cooked chicken, shredded
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • 2 cups egg noodles
  • Salt and pepper to taste
  • Fresh parsley, chopped for garnish

Instructions

  1. Heat olive oil in a Dutch oven over medium heat.
  2. Add onion, carrots, and celery. Cook until softened.
  3. Add garlic and cook for 1 minute.
  4. Pour in chicken broth and add shredded chicken, thyme, and bay leaf.
  5. Bring to a boil, then reduce heat and simmer for 15 minutes.
  6. Add egg noodles and cook until tender.
  7. Season with salt and pepper.
  8. Remove bay leaf and serve hot, garnished with parsley.
