  • 1 cup uncooked long-grain white rice
  • 1 cup tzatziki sauce
  • 1 cup chicken broth
  • 1 cup diced tomatoes
  • 1 cup diced cucumbers
  • 1/2 cup diced red onion
  • 2 cloves garlic, minced
  • 1 tsp dried oregano
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large baking dish, combine the diced chicken, uncooked rice, tzatziki sauce, chicken broth, tomatoes, cucumbers, red onion, garlic, oregano, salt, and pepper.
  3. Mix well to ensure all ingredients are evenly distributed.
  4. Cover the baking dish with aluminum foil.
  5. Bake in the preheated oven for 45 minutes.
  6. Remove the foil and bake for an additional 15 minutes, or until the rice is tender and the chicken is cooked through.
