- 1 cup fresh mint leaves
- 1/2 cup granulated sugar
- 1 cup water
- 1 cup crushed ice
- 1/4 cup fresh lemon juice
- 2 cups club soda
- Mint sprigs for garnish
Instructions
- In a small saucepan, combine the sugar and water. Heat over medium heat, stirring until the sugar dissolves completely to create a simple syrup. Remove from heat and let cool.
- Once the syrup has cooled, add the fresh mint leaves to the syrup. Stir gently and let it steep for about 30 minutes.
- Strain the mint syrup into a pitcher, discarding the mint leaves.
- In a glass, combine 2 oz of the mint syrup, 1 oz of fresh lemon juice, and fill with crushed ice.
- Top with club soda and stir gently.
- Garnish with a sprig of fresh mint and serve immediately.
Notes
- For a stronger mint flavor, let the mint leaves steep in the syrup for longer.
- This drink can be made in batches. Just scale the ingredients up!
- You can substitute club soda with lemon-lime soda for a sweeter twist.
