Ingredients
Scale
- 1 cup rice
- 2 cups water
- 1 tablespoon olive oil
- 1 teaspoon salt
- 2 cups mixed vegetables
- 1 tablespoon butter
- 1 teaspoon pepper
Instructions
- Rinse the rice under cold water.
- In a pot, combine rice, water, olive oil, and salt.
- Bring to a boil, then reduce heat and cover.
- Cook for 15 minutes or until water is absorbed.
- In a separate pan, melt butter and sauté mixed vegetables.
- Season vegetables with pepper.
- Serve rice with sautéed vegetables.

- Use any vegetables you prefer.
