Ingredients

  • 1 teaspoon cumin seeds
  • 1 onion, finely chopped
  • 2 garlic cloves, minced
  • 1 inch ginger, grated
  • 1 teaspoon turmeric powder
  • 1 teaspoon coriander powder
  • 1 teaspoon garam masala
  • 1 can (400g) diced tomatoes
  • 1 cup coconut milk
  • 2 cups mixed vegetables (carrots, peas, bell peppers)
  • Salt to taste
  • Fresh cilantro for garnish

Instructions

  1. Heat the vegetable oil in a large pan over medium heat.
  2. Add cumin seeds and allow them to sizzle for a few seconds.
  3. Add the chopped onion and sauté until golden brown.
  4. Stir in the minced garlic and grated ginger; cook for another minute.
  5. Add turmeric powder, coriander powder, and garam masala; cook for 1 minute until fragrant.
  6. Pour in the diced tomatoes and cook until they soften, about 5 minutes.
  7. Add the mixed vegetables and stir well.
  8. Pour in the coconut milk and season with salt. Bring to a simmer.
  9. Cover and cook for 15-20 minutes, or until the vegetables are tender.
  10. Garnish with fresh cilantro before serving.
