- 2 tablespoons vegetable oil
- 1 teaspoon cumin seeds
- 1 onion, finely chopped
- 2 garlic cloves, minced
- 1 inch ginger, grated
- 1 teaspoon turmeric powder
- 1 teaspoon coriander powder
- 1 teaspoon garam masala
- 1 can (400g) diced tomatoes
- 1 cup coconut milk
- 2 cups mixed vegetables (carrots, peas, bell peppers)
- Salt to taste
- Fresh cilantro for garnish
Instructions
- Heat the vegetable oil in a large pan over medium heat.
- Add cumin seeds and allow them to sizzle for a few seconds.
- Add the chopped onion and sauté until golden brown.
- Stir in the minced garlic and grated ginger; cook for another minute.
- Add turmeric powder, coriander powder, and garam masala; cook for 1 minute until fragrant.
- Pour in the diced tomatoes and cook until they soften, about 5 minutes.
- Add the mixed vegetables and stir well.
- Pour in the coconut milk and season with salt. Bring to a simmer.
- Cover and cook for 15-20 minutes, or until the vegetables are tender.
- Garnish with fresh cilantro before serving.
