- 2 boneless, skinless chicken breasts
- 1 tablespoon olive oil
- Salt and pepper to taste
- 4 cups mixed greens (spinach, arugula, romaine)
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1 bell pepper, diced
- 1/4 red onion, thinly sliced
- 1 avocado, sliced
- 1/4 cup feta cheese, crumbled
- 1/4 cup balsamic vinaigrette
Instructions
- Preheat the grill to medium-high heat.
- Brush the chicken breasts with olive oil and season with salt and pepper.
- Grill the chicken for 6-7 minutes on each side, or until cooked through. Remove from grill and let rest for a few minutes before slicing.
- In a large bowl, combine mixed greens, cherry tomatoes, cucumber, bell pepper, red onion, and avocado.
- Top the salad with sliced grilled chicken and sprinkle with feta cheese.
- Drizzle with balsamic vinaigrette and toss gently to combine. Serve immediately.
