Ingredients

  • 1/4 cup of feta cheese, crumbled (optional)

Instructions

  1. Rinse quinoa under cold water.
  2. In a pot, combine quinoa and 4 cups of water. Bring to a boil.
  3. Reduce heat and simmer for 15 minutes or until water is absorbed.
  4. Fluff quinoa with a fork and let it cool.
  5. In a large bowl, combine cherry tomatoes, cucumber, and bell pepper.
  6. Add cooled quinoa to the bowl.
  7. Drizzle with olive oil and lemon juice.
  8. Season with salt and pepper. Toss to combine.
  9. Top with feta cheese if desired.
