Ingredients

- 2 cups of quinoa
- 1 cup of black beans
- 1 bell pepper, diced
- 1 onion, chopped
- 2 cloves of garlic, minced
- 1 teaspoon cumin
- 1 teaspoon chili powder
- Salt to taste
- 2 tablespoons olive oil
- Fresh cilantro for garnish
Instructions
- Rinse the quinoa under cold water.
- In a pot, combine quinoa and 4 cups of water. Bring to a boil.
- Reduce heat and simmer for 15 minutes until water is absorbed.
- In a skillet, heat olive oil over medium heat.
- Add onion and garlic, sauté until onion is translucent.
- Add bell pepper, black beans, cumin, chili powder, and salt. Cook for 5 minutes.
- Fluff quinoa with a fork and mix with the skillet ingredients.
- Serve hot, garnished with fresh cilantro.
Notes
- Store leftovers in the refrigerator for up to 3 days.
- Adjust spices according to your taste.
