Ingredients

- 2 chicken breasts, diced
- 4 cups chicken broth
- 2 cups water
- 1 cup corn kernels
- 2 medium potatoes, peeled and diced
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 carrot, sliced
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tbsp olive oil
- 1 bay leaf
Instructions
- Heat olive oil in a pot over medium heat.
- Add onion and garlic, sauté until softened.
- Add chicken and cook until browned.
- Pour in chicken broth and water, bring to a boil.
- Add potatoes, corn, carrot, salt, pepper, and bay leaf.
- Reduce heat and simmer for 25 minutes.
- Remove bay leaf before serving.
