- 1 whole chicken, about 3–4 lbs
- 8 cups water
- 2 carrots, chopped
- 2 celery stalks, chopped
- 1 onion, diced
- 3 garlic cloves, minced
- 1 tsp salt
- 1/2 tsp black pepper
- 2 bay leaves
- 1 tsp dried thyme
- 1/4 cup fresh parsley, chopped
- 1 loaf crusty bread
- 2 tbsp butter, melted
- 1 tsp garlic powder
Instructions
- Place the chicken, water, carrots, celery, onion, garlic, salt, pepper, bay leaves, and thyme in a large pot.
- Bring to a boil, then reduce heat and simmer for 1 hour.
- Remove the chicken, shred the meat, and return it to the pot.
- Discard the bones and bay leaves.
- Stir in the fresh parsley.
- Slice the bread, brush with melted butter, and sprinkle with garlic powder.
- Toast the bread in the oven at 375°F for 5 minutes or until golden.
- Serve the soup hot with the crusty garlic bread.
Notes
- Use leftover chicken for a quicker version.
- Adjust seasoning to taste.
