Ingredients

  • 1 whole chicken, about 34 lbs
  • 8 cups water
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 1 onion, diced
  • 3 garlic cloves, minced
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 bay leaves
  • 1 tsp dried thyme
  • 1/4 cup fresh parsley, chopped
  • 1 loaf crusty bread
  • 2 tbsp butter, melted
  • 1 tsp garlic powder

Instructions

  1. Place the chicken, water, carrots, celery, onion, garlic, salt, pepper, bay leaves, and thyme in a large pot.
  2. Bring to a boil, then reduce heat and simmer for 1 hour.
  3. Remove the chicken, shred the meat, and return it to the pot.
  4. Discard the bones and bay leaves.
  5. Stir in the fresh parsley.
  6. Slice the bread, brush with melted butter, and sprinkle with garlic powder.
  7. Toast the bread in the oven at 375°F for 5 minutes or until golden.
  8. Serve the soup hot with the crusty garlic bread.
