Ingredients

  • 2 cups vegetable broth
  • 1 cup black beans, drained and rinsed
  • 1 cup corn, frozen or canned
  • 1 red bell pepper, chopped
  • 1 avocado, diced
  • 1 tablespoon olive oil
  • 1 teaspoon cumin
  • Salt to taste
  • Fresh cilantro for garnish

Instructions

  1. Rinse quinoa under cold water.
  2. In a pot, combine quinoa and vegetable broth. Bring to a boil.
  3. Reduce heat and simmer for 15 minutes, or until quinoa is fluffy.
  4. In a large bowl, mix black beans, corn, bell pepper, and avocado.
  5. Add cooked quinoa to the bowl.
  6. Drizzle with olive oil and sprinkle cumin and salt. Mix well.
  7. Garnish with fresh cilantro before serving.
