A simple and healthy dinner recipe suitable for the Daniel Fast.
Ingredients

- 1 cup quinoa
- 2 cups vegetable broth
- 1 cup black beans, drained and rinsed
- 1 cup corn, frozen or canned
- 1 red bell pepper, chopped
- 1 avocado, diced
- 1 tablespoon olive oil
- 1 teaspoon cumin
- Salt to taste
- Fresh cilantro for garnish
Instructions
- Rinse quinoa under cold water.
- In a pot, combine quinoa and vegetable broth. Bring to a boil.
- Reduce heat and simmer for 15 minutes, or until quinoa is fluffy.
- In a large bowl, mix black beans, corn, bell pepper, and avocado.
- Add cooked quinoa to the bowl.
- Drizzle with olive oil and sprinkle cumin and salt. Mix well.
- Garnish with fresh cilantro before serving.
Notes
- Adjust seasoning as needed.
- Serve warm or chilled.
- This dish can be stored in the refrigerator for up to 3 days.
