- 2 cups of quinoa
- 4 cups of vegetable broth
- 1 cup of black beans, cooked
- 1 cup of corn, fresh or frozen
- 1 bell pepper, diced
- 1 onion, diced
- 2 cloves of garlic, minced

Instructions
- Rinse quinoa under cold water.
- In a pot, heat olive oil over medium heat.
- Add onion and garlic, sauté until soft.
- Add bell pepper, cook for 3 minutes.
- Add quinoa, vegetable broth, cumin, chili powder, and salt.
- Bring to a boil, then reduce heat and simmer for 15 minutes.
- Add black beans and corn, stir well, and heat through.
- Garnish with fresh cilantro before serving.
