Ingredients

  • 2 cups of vegetable broth
  • 1 can of black beans, rinsed
  • 1 red bell pepper, chopped
  • 1 onion, chopped
  • 2 cloves of garlic, minced
  • 1 tablespoon of olive oil
  • 1 teaspoon of cumin
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Rinse the quinoa under cold water.
  2. In a pot, heat olive oil over medium heat.
  3. Add onion and garlic, sauté until soft.
  4. Add red bell pepper, cook for 2 minutes.
  5. Add quinoa, vegetable broth, black beans, cumin, salt, and pepper.
  6. Bring to a boil, then reduce heat and cover.
  7. Simmer for 15 minutes or until quinoa is cooked.
  8. Fluff with a fork and garnish with cilantro.
