Description
A simple meal plan for the Daniel Fast lasting 21 days.
Ingredients
- Quinoa – 2 cups
- Chickpeas – 1 can
- Spinach – 4 cups
- Tomatoes – 2 cups
- Cucumbers – 2 cups
- Olive oil – 1/4 cup
- Lemon juice – 1/4 cup
- Garlic – 2 cloves
- Salt – to taste
- Pepper – to taste
Instructions
- Rinse quinoa under cold water.
- Cook quinoa according to package instructions.
- In a bowl, combine cooked quinoa, chickpeas, spinach, tomatoes, and cucumbers.
- In a small bowl, whisk together olive oil, lemon juice, minced garlic, salt, and pepper.
- Pour dressing over the salad and mix well.
- Serve chilled or at room temperature.
Notes
- Feel free to add other vegetables.
- Store leftovers in the refrigerator.
- Can be served as a main dish or side dish.
