Ingredients

- 1 cup quinoa
- 2 cups vegetable broth
- 1 can black beans, rinsed and drained
- 1 cup corn, frozen or fresh
- 1 bell pepper, diced
- 1 avocado, diced
- 2 cups spinach
- 1 teaspoon cumin
- Salt and pepper to taste
Instructions
- Rinse the quinoa under cold water.
- In a pot, combine quinoa and vegetable broth. Bring to a boil.
- Reduce heat, cover, and simmer for 15 minutes.
- In a large bowl, combine black beans, corn, bell pepper, and spinach.
- Once quinoa is cooked, fluff it with a fork and add to the bowl.
- Add diced avocado and season with cumin, salt, and pepper.
- Toss everything together until well mixed.
- Serve warm or cold.

- Store leftovers in the refrigerator for up to 3 days.
