Instructions
- Rinse quinoa under cold water.
- Cook quinoa according to package instructions.

- Add bell pepper and spinach, cooking until soft.
- Mix in black beans and tomatoes, heating through.
- Combine cooked quinoa with the vegetable mixture.
- Drizzle with lemon juice and season with salt and pepper.
- Top with avocado slices before serving.
