Ingredients

- 1 cup quinoa
- 2 cups vegetable broth
- 1 can black beans, rinsed and drained
- 1 bell pepper, diced
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- 1 teaspoon cumin
- 1 teaspoon chili powder
- Salt and pepper to taste
Instructions
- Rinse the quinoa under cold water.
- In a pot, heat olive oil over medium heat.
- Add onion and garlic, sauté until translucent.
- Add bell pepper, cumin, and chili powder, cook for 2 minutes.
- Add quinoa and vegetable broth, bring to a boil.
- Reduce heat, cover, and simmer for 15 minutes or until liquid is absorbed.
- Stir in black beans and season with salt and pepper.
- Serve warm.

- This recipe serves four people.
- Adjust seasonings to taste.
- Can be stored in the refrigerator for up to three days.
