Ingredients

- 2 large cucumbers, sliced
- 1 cup cherry tomatoes, halved
- 1/4 red onion, thinly sliced
- 1/4 cup fresh parsley, chopped
- 1/4 cup feta cheese, crumbled
- 3 tablespoons olive oil
- 2 tablespoons apple cider vinegar
- 1 teaspoon honey
- Salt and pepper to taste
Instructions
- In a large bowl, combine the sliced cucumbers, cherry tomatoes, red onion, and parsley.
- In a small bowl, whisk together the olive oil, apple cider vinegar, honey, salt, and pepper.
- Pour the dressing over the cucumber mixture and toss to combine.
- Sprinkle the feta cheese over the top and serve immediately.

- For added protein, consider adding chickpeas or grilled chicken.
