A refreshing and invigorating drink perfect for hot days, combining the crispness of cucumbers with the tartness of lemons.


Ingredients

  • 1 medium cucumber, sliced
  • 1 cup fresh lemon juice (about 46 lemons)
  • 1/2 cup granulated sugar (adjust to taste)
  • 4 cups cold water
  • Ice cubes
  • Fresh mint leaves (optional for garnish)

Instructions

  1. In a blender, combine the sliced cucumber and 1 cup of water. Blend until smooth.
  2. Strain the cucumber mixture through a fine-mesh sieve or cheesecloth into a large pitcher to remove pulp.
  3. Add the fresh lemon juice, sugar, and remaining 3 cups of cold water to the cucumber juice. Stir until the sugar is dissolved.
  4. Taste and adjust sweetness as desired by adding more sugar or lemon juice.
  5. Serve over ice and garnish with fresh mint leaves if desired.

Notes

  • For a fizzy version, substitute some of the water with club soda.
  • Feel free to add more cucumbers or lemons according to your taste preference.
