  • 1 cup granulated sugar

  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • Maraschino cherries (optional, for decoration)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a medium saucepan, melt the butter over medium heat. Stir in the brown sugar until dissolved. Pour this mixture into a 9-inch round cake pan.
  3. Arrange the drained crushed pineapple evenly over the brown sugar mixture. If desired, place maraschino cherries in the center of each pineapple piece.
  4. In a large mixing bowl, combine the flour, granulated sugar, baking powder, and salt. In another bowl, whisk together the milk, eggs, and vanilla extract.
  5. Add the wet ingredients to the dry ingredients and mix until just combined. Pour the batter over the pineapple layer in the cake pan, spreading evenly.
  6. Bake in the preheated oven for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
  7. Allow the cake to cool in the pan for 10 minutes, then invert onto a serving platter. Let cool completely before slicing.
