- 1 cup brown sugar
- 1 cup all-purpose flour

- 1 teaspoon baking powder
- 1/2 teaspoon salt
- Maraschino cherries (optional, for decoration)
Instructions
- Preheat your oven to 350°F (175°C).
- In a medium saucepan, melt the butter over medium heat. Stir in the brown sugar until dissolved. Pour this mixture into a 9-inch round cake pan.
- Arrange the drained crushed pineapple evenly over the brown sugar mixture. If desired, place maraschino cherries in the center of each pineapple piece.
- In a large mixing bowl, combine the flour, granulated sugar, baking powder, and salt. In another bowl, whisk together the milk, eggs, and vanilla extract.
- Add the wet ingredients to the dry ingredients and mix until just combined. Pour the batter over the pineapple layer in the cake pan, spreading evenly.
- Bake in the preheated oven for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the cake to cool in the pan for 10 minutes, then invert onto a serving platter. Let cool completely before slicing.
Notes
- For an extra touch, you can add chopped pecans or walnuts to the brown sugar mixture before adding the pineapple.
