- 1 cup breadcrumbs
- 1 egg
- 1/4 cup flour
- Salt and pepper to taste

- 4 slices crusty bread
- 1 cup arugula
- 1 tbsp olive oil
Instructions
- Season chicken breasts with salt and pepper.
- Coat chicken in flour, dip in beaten egg, then cover with breadcrumbs.
- Heat olive oil in a pan and cook chicken until golden and crispy.
- Toast bread slices lightly.
- Spread romesco sauce on bread.
- Layer chicken and arugla on bread.
- Serve immediately.
