Deliciously soft and chewy cookies inspired by the famous Crumbl Churro Cookie, coated in cinnamon sugar and topped with a creamy glaze.

- 1 cup unsalted butter
- 1 cup granulated sugar
- 1/2 cup brown sugar
- 2 large eggs
- 1 tablespoon vanilla extract
- 3 cups all-purpose flour
- 1 teaspoon baking soda
- 2 teaspoons cinnamon
- 1/2 teaspoon salt
- 1/2 cup cinnamon sugar
- 1 cup powdered sugar
- 2 tablespoons milk
- 1/2 teaspoon vanilla extract
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
- Add in the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
- In a separate bowl, whisk together the flour, baking soda, cinnamon, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Scoop cookie dough onto the prepared baking sheet, leaving enough space between each cookie to allow for spreading.
- Bake for 10-12 minutes, or until the edges are lightly golden. The centers may look slightly underbaked.
- Remove from the oven and let cool for a few minutes, then roll each warm cookie in cinnamon sugar until fully coated.
- To make the glaze, whisk together powdered sugar, milk, and vanilla extract until smooth.
- Drizzle the glaze over the cooled cookies and let set before serving.
Notes
- Make sure to not overbake the cookies to keep them soft and chewy.
- You can adjust the amount of cinnamon in the sugar coating to your preference.
- These cookies are best enjoyed fresh but can be stored in an airtight container for up to 3 days.
