Ingredients

- 1 lb Italian sausage (sweet or hot)
- 2 bell peppers, sliced
- 1 onion, sliced
- 3 cloves garlic, minced
- 1 (14.5 oz) can diced tomatoes
- 1 tsp Italian seasoning
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 tbsp olive oil
Instructions
- Heat olive oil in a skillet over medium heat. Brown the sausage on all sides, about 5 minutes.
- Place the browned sausage in the crockpot.
- Add the sliced peppers, onion, and minced garlic.
- Pour the diced tomatoes over the top.
- Sprinkle with Italian seasoning, salt, and black pepper.
- Cover and cook on low for 6 hours or high for 3 hours.
- Serve hot with crusty bread or over rice.
Notes
- Use any color of bell peppers for variety.
- For extra flavor, deglaze the skillet with a splash of broth and add to the crockpot.
