These easy crockpot chicken tacos are flavorful, tender, and perfect for busy weeknights! Just throw everything in the crockpot and let it do the work for you.

- 1 pound boneless, skinless chicken breasts
- 1 packet taco seasoning
- 1 can (14.5 oz) diced tomatoes with green chilies, undrained
- 1/2 cup chicken broth
- 8 small flour or corn tortillas
- 1 cup shredded cheese (cheddar, Mexican blend, or your choice)
- Toppings: diced avocado, sour cream, cilantro, lime wedges
Instructions
- Place chicken breasts in the bottom of the crockpot.
- Sprinkle taco seasoning evenly over the chicken.
- Pour diced tomatoes with their juices and chicken broth over the chicken.
- Cover and cook on low for 6-7 hours or on high for 3-4 hours, until chicken is tender and easily shreds.
- Once cooked, shred the chicken using two forks and stir to combine with the sauce.
- Serve in tortillas and top with cheese and your favorite toppings.
Notes
- You can add bell peppers or onions for extra flavor.
- For a spicier version, use hot taco seasoning or add jalapeños.
- Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
