Ingredients

  • 1 packet taco seasoning
  • 1 can (14.5 oz) diced tomatoes with green chilies, undrained
  • 1/2 cup chicken broth
  • 8 small flour or corn tortillas
  • 1 cup shredded cheese (cheddar, Mexican blend, or your choice)
  • Toppings: diced avocado, sour cream, cilantro, lime wedges

Instructions

  1. Place chicken breasts in the bottom of the crockpot.
  2. Sprinkle taco seasoning evenly over the chicken.
  3. Pour diced tomatoes with their juices and chicken broth over the chicken.
  4. Cover and cook on low for 6-7 hours or on high for 3-4 hours, until chicken is tender and easily shreds.
  5. Once cooked, shred the chicken using two forks and stir to combine with the sauce.
  6. Serve in tortillas and top with cheese and your favorite toppings.

Notes
