Instructions
- Place the chicken in the crockpot.
- Add the diced tomatoes, black beans, corn, onion, and garlic on top of the chicken.
- Sprinkle the chili powder, cumin, salt, and pepper over the ingredients.
- Stir gently to combine the ingredients without disturbing the chicken too much.
- Cover and cook on low for 6-8 hours or high for 3-4 hours.
- Once cooked, shred the chicken directly in the crockpot using two forks and mix it with the other ingredients.
- Serve hot, garnished with fresh cilantro if desired.
