  • 1 tablespoon of chili powder
  • 1 teaspoon of cumin
  • Salt and pepper to taste
  • Fresh cilantro for garnish (optional)

Instructions

  1. Place the chicken in the crockpot.
  2. Add the diced tomatoes, black beans, corn, onion, and garlic on top of the chicken.
  3. Sprinkle the chili powder, cumin, salt, and pepper over the ingredients.
  4. Stir gently to combine the ingredients without disturbing the chicken too much.
  5. Cover and cook on low for 6-8 hours or high for 3-4 hours.
  6. Once cooked, shred the chicken directly in the crockpot using two forks and mix it with the other ingredients.
  7. Serve hot, garnished with fresh cilantro if desired.
