Ingredients

  • 2 lbs chicken thighs
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 tablespoon ginger, grated
  • 2 cups coconut milk
  • 2 tablespoons curry powder
  • 1 teaspoon turmeric
  • 1 cup chicken broth
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup peas
  • 1 red bell pepper, chopped

Instructions

  1. Add chicken thighs to the crockpot.
  2. In a bowl, mix onion, garlic, ginger, coconut milk, curry powder, turmeric, chicken broth, salt, and pepper.
  3. Pour the mixture over the chicken.
  4. Cover and cook on low for 6-8 hours or high for 3-4 hours.
  5. 30 minutes before serving, stir in peas and bell pepper.
  6. Serve over rice or with naan.
