Ingredients

- 2 lbs chicken thighs
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 tablespoon ginger, grated
- 2 cups coconut milk
- 2 tablespoons curry powder
- 1 teaspoon turmeric
- 1 cup chicken broth
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup peas
- 1 red bell pepper, chopped
Instructions
- Add chicken thighs to the crockpot.
- In a bowl, mix onion, garlic, ginger, coconut milk, curry powder, turmeric, chicken broth, salt, and pepper.
- Pour the mixture over the chicken.
- Cover and cook on low for 6-8 hours or high for 3-4 hours.
- 30 minutes before serving, stir in peas and bell pepper.
- Serve over rice or with naan.
Notes
- Adjust spice level to your preference.
- For a thicker sauce, remove the lid for the last hour of cooking.
- Leftovers can be stored in the fridge for up to 3 days.
