Description
A hearty and comforting chicken pot pie made in a crockpot.
Ingredients

- 2 cups cooked chicken, shredded
- 1 cup frozen mixed vegetables
- 1 can cream of chicken soup (10.5 oz)
- 1 cup chicken broth
- 1 teaspoon onion powder
- 1 teaspoon garlic powder
- 1 teaspoon thyme
- 1 teaspoon black pepper
- 1 package refrigerated pie crusts (two crusts)
Instructions
- In a crockpot, combine shredded chicken, mixed vegetables, cream of chicken soup, chicken broth, onion powder, garlic powder, thyme, and black pepper.
- Mix well until combined.
- Cover and cook on low for 6-7 hours or on high for 3-4 hours.
- About 30 minutes before serving, prepare the pie crusts according to package instructions.
- Pour the chicken mixture into a baking dish and cover with pie crusts.
- Bake in an oven preheated to 425°F for 20-25 minutes or until the crust is golden brown.
Notes
- Feel free to add other vegetables like peas or corn.
- You can use leftover rotisserie chicken for quicker prep.
- For a thicker filling, add a cornstarch slurry before baking.
