Description

A hearty and comforting chicken pot pie made in a crockpot.


Ingredients

  • 2 cups cooked chicken, shredded
  • 1 cup frozen mixed vegetables
  • 1 can cream of chicken soup (10.5 oz)
  • 1 cup chicken broth
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1 teaspoon thyme
  • 1 teaspoon black pepper
  • 1 package refrigerated pie crusts (two crusts)

Instructions

  1. In a crockpot, combine shredded chicken, mixed vegetables, cream of chicken soup, chicken broth, onion powder, garlic powder, thyme, and black pepper.
  2. Mix well until combined.
  3. Cover and cook on low for 6-7 hours or on high for 3-4 hours.
  4. About 30 minutes before serving, prepare the pie crusts according to package instructions.
  5. Pour the chicken mixture into a baking dish and cover with pie crusts.
  6. Bake in an oven preheated to 425°F for 20-25 minutes or until the crust is golden brown.

Notes

  • Feel free to add other vegetables like peas or corn.
  • You can use leftover rotisserie chicken for quicker prep.
  • For a thicker filling, add a cornstarch slurry before baking.
