- 2 boneless, skinless chicken breasts
- 1 (24 oz) jar marinara sauce
- 1 (14.5 oz) can diced tomatoes
- 1 small onion, diced
- 3 cloves garlic, minced
- 1 tsp dried basil
- 1 tsp dried oregano
- 1/2 tsp salt
- 1/4 tsp black pepper
- 8 oz uncooked pasta (penne or rotini)
- 1/2 cup shredded mozzarella cheese
- Fresh parsley for garnish (optional)
Instructions
- Place chicken breasts in the crockpot.
- Add marinara sauce, diced tomatoes, onion, garlic, basil, oregano, salt, and pepper.
- Cover and cook on low for 6 hours or high for 3 hours.
- Shred the chicken with two forks.
- Stir in the uncooked pasta, cover, and cook on high for 20-25 minutes until pasta is tender.
- Sprinkle with mozzarella cheese and let it melt before serving.
- Garnish with fresh parsley if desired.
Notes
- If the pasta absorbs too much liquid, add a splash of water or broth.
- For extra flavor, add 1/2 tsp red pepper flakes.
- Use whole wheat pasta for a healthier option.
