Description
A comforting and hearty chicken noodle soup made easily in a crockpot.
Ingredients

- 1 lb boneless, skinless chicken breasts
- 6 cups chicken broth
- 2 cups water
- 3 carrots, sliced
- 3 celery stalks, sliced
- 1 onion, diced
- 2 cloves garlic, minced
- 1 tsp dried thyme
- 1 tsp dried parsley
- 1/2 tsp salt
- 1/4 tsp black pepper
- 2 cups egg noodles
Instructions
- Place chicken breasts in the crockpot.
- Add chicken broth, water, carrots, celery, onion, garlic, thyme, parsley, salt, and pepper.
- Cover and cook on low for 6-8 hours or high for 3-4 hours.
- Remove chicken and shred it with forks.
- Return shredded chicken to the crockpot.
- Add egg noodles and cook on high for 15-20 minutes until noodles are tender.
- Serve hot.
Notes
- Use fresh vegetables for best flavor.
- Adjust seasoning to taste.
- Store leftovers in an airtight container for up to 3 days.
