Description
A hearty and comforting soup made with chicken, gnocchi, and vegetables, cooked slowly in a crockpot.
Ingredients

- 2 cups cooked chicken, shredded
- 1 cup gnocchi
- 4 cups chicken broth
- 1 cup carrots, diced
- 1 cup celery, diced
- 1 onion, chopped
- 2 cups spinach
- 1 cup heavy cream
- 2 cloves garlic, minced
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
Instructions
- In the crockpot, combine chicken, gnocchi, chicken broth, carrots, celery, onion, garlic, and Italian seasoning.
- Stir well and cover the crockpot.
- Cook on low for 6-8 hours or high for 3-4 hours.
- About 30 minutes before serving, add spinach and heavy cream.
- Stir and cook until heated through. Adjust seasoning to taste.
- Serve hot.
Notes
- This soup can be stored in the refrigerator for up to 3 days.
- Freezing is not recommended due to gnocchi texture.
- Feel free to add other vegetables such as peas or corn.
