Ingredients

  • 2 lbs boneless chicken breasts
  • 1 can (10 oz) enchilada sauce
  • 1 can (4 oz) diced green chiles
  • 1 tsp cumin
  • 1 tsp garlic powder
  • 1/2 tsp salt
  • 8 flour tortillas
  • 2 cups shredded cheese
  • 1/4 cup chopped cilantro

Instructions

  1. Place chicken in the crockpot.
  2. Add enchilada sauce, green chiles, cumin, garlic powder, and salt.
  3. Cook on low for 6 hours or high for 3 hours.
  4. Shred chicken with forks.
  5. Fill tortillas with chicken mixture and cheese.
  6. Roll tortillas and place in a baking dish.
  7. Top with remaining sauce and cheese.
  8. Bake at 350°F for 20 minutes.
  9. Garnish with cilantro before serving.
