Ingredients

- 2 lbs boneless chicken breasts
- 1 can (10 oz) enchilada sauce
- 1 can (4 oz) diced green chiles
- 1 tsp cumin
- 1 tsp garlic powder
- 1/2 tsp salt
- 8 flour tortillas
- 2 cups shredded cheese
- 1/4 cup chopped cilantro
Instructions
- Place chicken in the crockpot.
- Add enchilada sauce, green chiles, cumin, garlic powder, and salt.
- Cook on low for 6 hours or high for 3 hours.
- Shred chicken with forks.
- Fill tortillas with chicken mixture and cheese.
- Roll tortillas and place in a baking dish.
- Top with remaining sauce and cheese.
- Bake at 350°F for 20 minutes.
- Garnish with cilantro before serving.

- Use corn tortillas for gluten-free option.
- Add black beans for extra protein.
