- 4 bone-in chicken thighs

- 1 cup biscuit mix
- 1/2 cup milk

Instructions
- Place the chicken thighs in the crockpot.
- Add the diced carrots, diced celery, and chopped onion on top of the chicken.
- In a separate bowl, mix together the chicken broth, cream of chicken soup, garlic powder, onion powder, and dried thyme.
- Pour the mixture over the chicken and vegetables in the crockpot.
- Cover and cook on low for 6 hours or until the chicken is tender.
- Once the chicken is cooked, remove it from the crockpot and shred it using two forks.
- Return the shredded chicken to the crockpot.
- In a bowl, combine the biscuit mix and milk to make the dumpling batter.
- Drop spoonfuls of the dumpling batter over the chicken mixture in the crockpot.
- Cover and cook on high for an additional 30 minutes or until the dumplings are cooked through.
