A hearty and easy crockpot beef stew with tender meat, potatoes, and vegetables in a rich broth.
Ingredients

- 1.5 lbs beef stew meat, cubed
- 4 medium potatoes, peeled and diced
- 3 large carrots, sliced
- 1 onion, chopped
- 3 cloves garlic, minced
- 4 cups beef broth
- 1 tbsp tomato paste
- 1 tsp Worcestershire sauce
- 1 tsp dried thyme
- 1 tsp dried rosemary
- 1/2 tsp salt
- 1/2 tsp black pepper
- 2 tbsp all-purpose flour (optional, for thickening)
Instructions
- Place beef, potatoes, carrots, onion, and garlic in the crockpot.
- In a bowl, mix beef broth, tomato paste, Worcestershire sauce, thyme, rosemary, salt, and pepper.
- Pour the mixture over the ingredients in the crockpot.
- Cover and cook on low for 7-8 hours or on high for 4-5 hours.
- If a thicker stew is desired, mix flour with 2 tbsp of water and stir into the stew 30 minutes before serving.
- Serve hot.
Notes
- For extra flavor, brown the beef in a skillet before adding to the crockpot.
- This stew freezes well for up to 3 months.
- Add other vegetables like peas or celery if desired.
