A hearty and flavorful taco soup made in a crock pot.
Ingredients

- 1 pound ground beef
- 1 can black beans, drained
- 1 can kidney beans, drained
- 1 can corn, drained
- 1 can diced tomatoes with green chilies
- 1 packet taco seasoning
- 2 cups beef broth
- 1 cup chopped onion
- 1 cup bell pepper, chopped
- 1 cup corn chips, for serving
- Shredded cheese, for topping
- Chopped cilantro, for garnish
Instructions
- Brown the ground beef in a skillet and drain excess fat.
- Add the beef to the crock pot.
- Stir in black beans, kidney beans, corn, diced tomatoes, taco seasoning, beef broth, onion, and bell pepper.
- Mix well to combine all ingredients.
- Cover and cook on low for 6-8 hours or high for 3-4 hours.
- Serve hot topped with corn chips, cheese, and cilantro.
Notes
- Adjust seasoning to your taste.
- Can substitute ground turkey for beef.
- Freeze leftovers for later use.
