Description

A hearty and flavorful taco soup made in a crock pot.


Ingredients

  • 1 pound ground beef
  • 1 can black beans, drained
  • 1 can kidney beans, drained
  • 1 can corn, drained
  • 1 can diced tomatoes with green chilies
  • 1 packet taco seasoning
  • 2 cups beef broth
  • 1 cup chopped onion
  • 1 cup bell pepper, chopped
  • 1 cup corn chips, for serving
  • Shredded cheese, for topping
  • Chopped cilantro, for garnish

Instructions

  1. Brown the ground beef in a skillet and drain excess fat.
  2. Add the beef to the crock pot.
  3. Stir in black beans, kidney beans, corn, diced tomatoes, taco seasoning, beef broth, onion, and bell pepper.
  4. Mix well to combine all ingredients.
  5. Cover and cook on low for 6-8 hours or high for 3-4 hours.
  6. Serve hot topped with corn chips, cheese, and cilantro.

  • Adjust seasoning to your taste.
  • Can substitute ground turkey for beef.
