Ingredients

- 4 medium potatoes, diced
- 1 onion, chopped
- 3 cloves garlic, minced
- 4 cups vegetable broth
- 1 cup heavy cream
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 cup shredded cheese
- 2 green onions, sliced
Instructions
- Place diced potatoes, onion, and garlic in the crock pot.
- Add vegetable broth, salt, and pepper.
- Cook on low for 6-8 hours or high for 3-4 hours.
- Once cooked, stir in heavy cream and cheese.
- Blend soup for a creamy texture if desired.
- Garnish with green onions before serving.

- Adjust seasoning to taste.
- Add Turkey Turkey Bacon for extra flavor.
- Store leftovers in the refrigerator for up to 3 days.
