Description

A delicious and easy-to-make baked salmon dish with crispy parmesan crust and roasted asparagus. Perfect for a quick weeknight dinner or a special occasion.


Ingredients

  • 4 salmon fillets (6 oz each)
  • 1 bunch asparagus, trimmed
  • 1/2 cup grated parmesan cheese
  • 1/4 cup breadcrumbs
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 lemon, sliced

Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a bowl, mix parmesan, breadcrumbs, garlic powder, paprika, salt, and pepper.
  3. Place salmon fillets on the baking sheet. Drizzle with 1 tbsp olive oil.
  4. Press the parmesan mixture onto the top of each salmon fillet.
  5. Toss asparagus with remaining olive oil and place around the salmon.
  6. Bake for 12-15 minutes until salmon is cooked and topping is crispy.
  7. Serve with lemon slices.

Notes

  • Use fresh salmon for best results.
  • Adjust seasoning to taste.
  • For extra crispiness, broil for 1-2 minutes at the end.
