- 4 large potatoes, cut into wedges
- 2 tbsp olive oil
- 3 cloves garlic, minced
- 1 tsp dried rosemary
- 1 tsp dried thyme
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/2 cup mayonnaise
- 1 tbsp lemon juice
- 1 tsp honey
- 1/2 tsp paprika
Instructions
- Preheat the oven to 400°F (200°C).
- Toss potato wedges with olive oil, garlic, rosemary, thyme, salt, and pepper.
- Arrange wedges in a single layer on a baking sheet.
- Bake for 30-35 minutes until golden and crispy.
- While the wedges bake, mix mayonnaise, lemon juice, honey, and paprika to make the dipping sauce.
- Serve warm with the dipping sauce.
Notes
- For crispier wedges, soak potatoes in cold water for 30 minutes before baking.
- Adjust seasoning to taste.
- Store leftovers in an airtight container for up to 2 days.
