  • 1 cup breadcrumbs

  • 2 eggs, beaten
  • 1/2 cup all-purpose flour

  • 1 cup marinara sauce
  • 1/2 cup shredded mozzarella cheese
  • 2 tbsp olive oil
  • 4 medium potatoes, cubed
  • 3 tbsp butter, melted

  • 1 tsp dried parsley

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Season chicken with salt and pepper.
  3. Dredge chicken in flour, dip in beaten eggs, then coat with breadcrumb-parmesan mixture.
  4. Heat olive oil in a pan and cook chicken for 3-4 minutes per side until golden.
  5. Transfer chicken to a baking dish, top with marinara sauce and mozzarella cheese.
  6. Bake for 15 minutes until cheese melts and chicken cooks through.
  7. Toss potatoes with melted butter, garlic, and parsley.
  8. Roast potatoes in the oven for 25 minutes until crispy and golden.
