- 2 boneless, skinless chicken breasts
- 1 cup breadcrumbs
- 1/2 cup grated parmesan cheese
- 2 eggs, beaten
- 1/2 cup all-purpose flour

- 1 cup marinara sauce
- 1/2 cup shredded mozzarella cheese
- 2 tbsp olive oil
- 4 medium potatoes, cubed
- 3 tbsp butter, melted
- 2 cloves garlic, minced
- 1 tsp dried parsley
Instructions
- Preheat oven to 400°F (200°C).
- Season chicken with salt and pepper.
- Dredge chicken in flour, dip in beaten eggs, then coat with breadcrumb-parmesan mixture.
- Heat olive oil in a pan and cook chicken for 3-4 minutes per side until golden.
- Transfer chicken to a baking dish, top with marinara sauce and mozzarella cheese.
- Bake for 15 minutes until cheese melts and chicken cooks through.
- Toss potatoes with melted butter, garlic, and parsley.
- Roast potatoes in the oven for 25 minutes until crispy and golden.
- Serve chicken parmesan with garlic butter potatoes.

- Use panko breadcrumbs for extra crispiness.
- For spicier flavor, add red pepper flakes to the breadcrumb mix.
