- 2 boneless, skinless chicken breasts
- 1 cup breadcrumbs
- 1/2 cup grated Parmesan cheese
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
- 1/2 cup Caesar dressing
- 4 slices of bread (your choice)
- 4 leaves of romaine lettuce
- Tomato slices (optional)
- Olive oil for frying
Instructions
- Preheat a skillet over medium heat and add olive oil.
- In a shallow bowl, mix breadcrumbs, grated Parmesan cheese, garlic powder, onion powder, salt, and pepper.
- Pound the chicken breasts to an even thickness for even cooking.
- Coat each chicken breast in the breadcrumb mixture, pressing down to adhere well.
- Place the coated chicken in the skillet and cook for 4-5 minutes on each side until golden brown and cooked through.
- While the chicken is cooking, toast the bread slices in a toaster or on a separate pan.
- Once the chicken is cooked, remove from skillet and let it rest for a minute.
- Spread Caesar dressing on each slice of toasted bread.
- Layer with romaine lettuce, the crispy chicken, and tomato slices if desired.
- Top with another slice of bread, slice in half, and serve immediately.
