Ingredients

  • 1 cup panko breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1 egg
  • 1/2 cup all-purpose flour
  • 1 tsp garlic powder
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/4 cup olive oil
  • 4 slices crusty bread or ciabatta
  • 1/2 cup Caesar dressing
  • 1 cup romaine lettuce, shredded
  • 1/4 cup shaved Parmesan cheese

Instructions

  1. Preheat oven to 375°F.
  2. Mix panko breadcrumbs and grated Parmesan in a shallow dish.
  3. Whisk egg in a separate bowl.
  4. Combine flour, garlic powder, salt, and pepper in another dish.
  5. Coat chicken in flour, dip in egg, then press into breadcrumb mixture.
  6. Heat olive oil in a pan over medium heat. Cook chicken for 3-4 minutes per side until golden.
  7. Transfer chicken to a baking sheet and bake for 10 minutes.
  8. Toast bread slices lightly.
  9. Spread Caesar dressing on both slices.
  10. Place lettuce, crispy chicken, and shaved Parmesan on one slice.
  11. Top with the second slice and serve.
