- 2 boneless, skinless chicken breasts
- 1 cup panko breadcrumbs
- 1/2 cup grated Parmesan cheese
- 1 egg
- 1/2 cup all-purpose flour
- 1 tsp garlic powder
- 1 tsp salt
- 1/2 tsp black pepper
- 1/4 cup olive oil
- 4 slices crusty bread or ciabatta
- 1/2 cup Caesar dressing
- 1 cup romaine lettuce, shredded
- 1/4 cup shaved Parmesan cheese
Instructions
- Preheat oven to 375°F.
- Mix panko breadcrumbs and grated Parmesan in a shallow dish.
- Whisk egg in a separate bowl.
- Combine flour, garlic powder, salt, and pepper in another dish.
- Coat chicken in flour, dip in egg, then press into breadcrumb mixture.
- Heat olive oil in a pan over medium heat. Cook chicken for 3-4 minutes per side until golden.
- Transfer chicken to a baking sheet and bake for 10 minutes.
- Toast bread slices lightly.
- Spread Caesar dressing on both slices.
- Place lettuce, crispy chicken, and shaved Parmesan on one slice.
- Top with the second slice and serve.
