- 1 lb ground beef
- 1 tbsp olive oil
- 1 small onion, diced
- 1 bell pepper, diced
- 1 tsp salt
- 1 tsp black pepper
- 1 tsp cumin
- 1 tsp chili powder
- 1 cup shredded cheddar cheese
- 1 cup shredded Monterey Jack cheese
- 4 large flour tortillas
- 1 tbsp butter
Instructions
- Heat olive oil in a pan over medium heat.
- Add onion and bell pepper, cook until soft.
- Add ground beef, salt, black pepper, cumin, and chili powder. Cook until beef is browned.
- Remove from heat and drain excess fat.
- Place a tortilla on a flat surface and spread half with the beef mixture.
- Sprinkle cheese over the beef.
- Fold the tortilla in half.
- Heat butter in a skillet over medium heat.
- Cook the quesadilla for 2-3 minutes on each side until golden and crispy.
- Repeat with remaining tortillas and filling.
- Cut into wedges and serve hot.

- Add jalapeños for extra spice.
