Ingredients

  • 1 lb ground beef
  • 1 tbsp olive oil
  • 1 small onion, diced
  • 1 bell pepper, diced
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tsp cumin
  • 1 tsp chili powder
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 4 large flour tortillas
  • 1 tbsp butter

Instructions

  1. Heat olive oil in a pan over medium heat.
  2. Add onion and bell pepper, cook until soft.
  3. Add ground beef, salt, black pepper, cumin, and chili powder. Cook until beef is browned.
  4. Remove from heat and drain excess fat.
  5. Place a tortilla on a flat surface and spread half with the beef mixture.
  6. Sprinkle cheese over the beef.
  7. Fold the tortilla in half.
  8. Heat butter in a skillet over medium heat.
  9. Cook the quesadilla for 2-3 minutes on each side until golden and crispy.
  10. Repeat with remaining tortillas and filling.
  11. Cut into wedges and serve hot.
