- 1 lb ground meat
- 1/2 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1/4 cup chopped parsley
- 1 egg
- 2 cloves garlic, minced
- 1/2 onion, finely chopped
- 1 tsp salt
- 1/2 tsp black pepper
- 1 cup marinara sauce
- 1/2 cup mozzarella cheese, cubed
- 1/4 cup olives, sliced
Instructions
- Preheat the oven to 375°F (190°C).
- In a large bowl, combine the ground meat, breadcrumbs, Parmesan cheese, parsley, egg, garlic, onion, salt, and black pepper.
- Gently mix the ingredients until just combined, being careful not to overmix.
- Form the mixture into meatballs, about 1 inch in diameter.
- Use your finger to create a small indentation in the center of each meatball.
- Place a cube of mozzarella cheese into the indentation and reshape the meatball to seal the cheese inside.
- Arrange the meatballs on a baking sheet lined with parchment paper.
- Bake in the preheated oven for 20-25 minutes, or until cooked through.
- While the meatballs are baking, heat the marinara sauce in a saucepan over medium heat.
- Once the meatballs are done, remove them from the oven and place them in the sauce.
- Top each meatball with a slice of olive to create the ‘eyeball’ effect.
