- 4 boneless, skinless chicken breasts
- 1 tbsp olive oil
- 1 tsp salt
- 1 tsp black pepper
- 1 tsp garlic powder
- 1 cup heavy cream
- 1/2 cup chicken broth
- 1 tsp Italian seasoning
- 1/2 cup grated Parmesan cheese
- 2 cups fresh spinach
- 1/3 cup sun-dried tomatoes (chopped)
- 2 cloves garlic (minced)
Instructions
- Season chicken breasts with salt, pepper, and garlic powder.
- Heat olive oil in a large skillet over medium heat.
- Cook chicken breasts for 5-6 minutes per side until golden brown.
- Remove chicken and set aside.
- In the same skillet, sauté minced garlic for 30 seconds.
- Pour in chicken broth and scrape browned bits from the pan.
- Add heavy cream, Italian seasoning, and Parmesan cheese.
- Stir until sauce thickens slightly.
- Mix in spinach and sun-dried tomatoes.
- Return chicken to skillet and simmer for 5 minutes.

- Serve with pasta or crusty bread.
