Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 tbsp olive oil
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tsp garlic powder
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1 tsp Italian seasoning
  • 1/2 cup grated Parmesan cheese
  • 2 cups fresh spinach
  • 1/3 cup sun-dried tomatoes (chopped)
  • 2 cloves garlic (minced)

Instructions

  1. Season chicken breasts with salt, pepper, and garlic powder.
  2. Heat olive oil in a large skillet over medium heat.
  3. Cook chicken breasts for 5-6 minutes per side until golden brown.
  4. Remove chicken and set aside.
  5. In the same skillet, sauté minced garlic for 30 seconds.
  6. Pour in chicken broth and scrape browned bits from the pan.
  7. Add heavy cream, Italian seasoning, and Parmesan cheese.
  8. Stir until sauce thickens slightly.
  9. Mix in spinach and sun-dried tomatoes.
  10. Return chicken to skillet and simmer for 5 minutes.
