- 2 boneless, skinless chicken breasts
- 1 tbsp olive oil
- 2 cloves garlic, minced
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1 cup fresh spinach
- 1/2 cup sun-dried tomatoes, chopped
- 1 tsp Italian seasoning
- Salt and pepper to taste
Instructions
- Heat olive oil in a large skillet over medium heat.
- Season chicken with salt, pepper, and Italian seasoning, then cook until golden and fully cooked (5-6 minutes per side). Remove and set aside.
- In the same skillet, sauté garlic for 30 seconds.
- Add heavy cream, Parmesan, and sun-dried tomatoes. Stir until smooth.
- Return chicken to the skillet and simmer for 2 minutes.
- Add spinach and cook until wilted (1-2 minutes).
- Serve hot with extra Parmesan if desired.
