Ingredients

  • 2 boneless, skinless chicken breasts
  • 1 tbsp olive oil
  • 2 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1 cup fresh spinach
  • 1/2 cup sun-dried tomatoes, chopped
  • 1 tsp Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Season chicken with salt, pepper, and Italian seasoning, then cook until golden and fully cooked (5-6 minutes per side). Remove and set aside.
  3. In the same skillet, sauté garlic for 30 seconds.
  4. Add heavy cream, Parmesan, and sun-dried tomatoes. Stir until smooth.
  5. Return chicken to the skillet and simmer for 2 minutes.
  6. Add spinach and cook until wilted (1-2 minutes).
  7. Serve hot with extra Parmesan if desired.
