- 4 boneless, skinless chicken breasts
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 cup heavy cream
- 1 cup chicken broth
- 1 cup sun-dried tomatoes, chopped
- 1 cup fresh spinach
- 1/2 cup grated Parmesan cheese
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
Instructions
- Heat olive oil in a large skillet over medium-high heat.
- Season chicken breasts with salt and pepper. Add to the skillet and cook until golden brown on both sides, about 6-7 minutes per side.
- Remove chicken and set aside.
- Add garlic to the skillet and sauté for 1 minute.
- Pour in chicken broth and bring to a simmer.
- Add heavy cream, sun-dried tomatoes, spinach, Parmesan cheese, and Italian seasoning. Stir well.
- Return chicken to the skillet and simmer for another 5-7 minutes until chicken is cooked through.
- Serve hot, garnished with extra Parmesan if desired.
Notes
- Serve with pasta or rice for a complete meal.
- Store leftovers in an airtight container in the refrigerator.
- This dish can be made ahead of time and reheated.
