- 2 boneless, skinless chicken breasts
- 1 tbsp olive oil
- 3 garlic cloves, minced
- 1 cup heavy cream
- 1/2 cup chicken broth
- 1/2 cup grated parmesan cheese
- 1 tsp Italian seasoning
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 cup spinach, chopped
- 1/4 cup sun-dried tomatoes, chopped
Instructions
- Heat olive oil in a skillet over medium heat. Add chicken and cook for 6-7 minutes per side until golden. Remove and set aside.
- In the same skillet, sauté garlic for 1 minute until fragrant.
- Pour in heavy cream and chicken broth, stirring to combine.
- Add parmesan, Italian seasoning, salt, and pepper. Stir until cheese melts.
- Return chicken to the skillet. Add spinach and sun-dried tomatoes.
- Simmer for 5 minutes until spinach wilts and sauce thickens.
- Serve warm.

- Use fresh spinach for best results.
