- 2 boneless, skinless chicken breasts
- 8 oz penne pasta
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1/2 cup sun-dried tomatoes, chopped
- 2 cups fresh spinach
- 3 cloves garlic, minced
- 1 tbsp olive oil
- 1 tsp Italian seasoning
- Salt and pepper to taste
Instructions
- Cook pasta according to package instructions. Drain and set aside.
- Heat olive oil in a large skillet over medium heat. Add chicken and cook until browned and fully cooked.
- Remove chicken and set aside. In the same skillet, sauté garlic until fragrant.
- Add heavy cream, Parmesan, Italian seasoning, salt, and pepper. Stir until smooth.
- Add sun-dried tomatoes and spinach. Cook until spinach wilts.
- Return chicken to the skillet and mix with the sauce.
- Toss in cooked pasta and stir until well coated.
- Serve hot.
Notes
- Use fresh spinach for best results.
- Adjust seasoning to taste.
- Store leftovers in an airtight container for up to 3 days.
